kitchen favorites
For pulling together Mexican dinner recipes, a few key pieces of equipment make everything easier. Here are my go-to tools:
A cast iron skillet is essential for searing carne asada, cooking fajitas, and blistering tortillas. Nothing else gets the same char and flavor development on peppers, onions, and meat.
An Instant Pot or pressure cooker is a game changer for shredded chicken tinga, carnitas, and chipotle chicken. It cuts hours of slow cooking down to about 30 minutes.
A large sheet pan handles sheet pan tacos, roasted vegetables, and crispy baked taquitos. Look for a heavy-duty aluminum pan that heats evenly without warping.
A sharp chef’s knife is a must for prepping onions, peppers, cilantro, and slicing steak thin against the grain.
A molcajete or mortar and pestle is perfect for making fresh guacamole and grinding whole spices.
Tortilla warmers keep tortillas soft throughout the meal. You can also use the microwave! Just wrap the tortillas in a damp paper towel and heat in 30 second increments until pliable.
A citrus juicer or handheld reamer makes squeezing fresh lime juice fast and mess-free. Fresh lime juice appears in basically every Mexican recipe, so this saves so much time.
just one more thing…
Let’s talk cocktails to pair with these Mexican dinner recipes. Here are a couple of drinks that go great with the recipes in this round-up:
Classic Patron Margarita: The perfect pairing for tacos, tostadas, and pretty much any Mexican dinner.
Mexican Mule: A twist on the classic Moscow mule with tequila, lime, ginger beer, and fresh mint. Refreshing and pairs well with spicier dishes.
