This peach vodka cocktail is the sparkling summer drink you didn’t know you needed.

There are few things in this world that rival a perfectly ripe Palisade peach during peach season. If you know, you know. I still think about the summer many years ago when I visited Palisade and basically lived off peaches for three straight days. Fresh peaches at every farm stand, peach ice cream melting down my hand, peach jam samples at every winery. And oh yes – the peach pizza. The glorious peach pizza.

I wish I had this cocktail in hand when I devoured that slice.

This fresh peach vodka cocktail is bright, juicy, and just the right amount of bubbly. It’s the kind of drink that feels extra, despite being insanely easy to make. You muddle real peaches with lemon juice and just a touch of sweetener, then shake it all up with vodka and finish with a splash of sparkling water. It’s crisp, not-too-sweet, and summer in a glass.

Sip on it while you’re lounging on the patio, serve it up for a backyard happy hour, or when you just need something refreshing after a long week.

Fresh ripe peach – Go for peak-season, fragrant peaches (Palisade peaches if you can get them!). The riper they are, the juicier and sweeter your cocktail will be.

Vodka – A clean, smooth vodka works best here. No need to splurge on the top shelf, but skip the bottom-tier stuff. You want something neutral so the peach can shine, like Tito’s.

Fresh lemon juice – Be sure to use fresh lemon juice as bottled juice tends to be way to tart.

Simple syrup – We like to make our own simple syrup – it’s so easy and way cheaper than buying in the store! You can also use agave if you prefer.

Sparkling water – Unflavored works best so it doesn’t compete with the peach. If you want an extra punch of flavor, you could use ginger beer instead.

Peach slices & mint sprig – Optional but highly encouraged for garnish!

A cocktail shaker to get everything nicely chilled. Use a muddler to break down the peaches and release all that juicy flavor. Use a cocktail strainer or fine mesh sieve to strain out any big peach chunks.

muddle

Muddle the peach slices, lemon juice, and simple syrup (or agave) in an empty cocktail shaker until the peaches are well smashed and juicy.

Add vodka to the peach puree mixture and fill the shaker with ice.

Shake it up for 15 to 20 seconds until it’s chilled thoroughly.

strain

Strain the cocktail into a glass filled with ice.

Top with sparkling water. Garnish with a fresh peach slice and a sprig of fresh mint.

Tips for Success

Choose ripe, juicy peaches. A soft peach with a strong sweet smell is ideal. If it feels like a cue ball, it’s not ready.

Muddle with intention. Really smash those peach slices to get the most flavor. If you don’t have a muddler, the back of a wooden spoon works great.

Shake, don’t stir. Shaking chills the drink and blends everything smoothly. A stir won’t give you the same texture or chill.

Add sparkling water after shaking. Never shake carbonated ingredients unless you want a mess on your hands.

Make it extra boozy. Instead of topping it off with sparkling water, use prosecco or champagne for an extra zing.

  • Make it Frozen: Blend everything with ice instead of shaking for a slushy version. This is the one to make when it’s in the triple digits outside!
  • Non-Alcoholic Version: Skip the vodka and add more sparkling water or use a non-alcoholic spirit like Seedlip Grove or Ritual.
  • Add Some Herbs: Add a few basil or mint leaves to the shaker with the peaches for a more complex herbal flavor.

Yes! If peaches are out of season or you’re in a pinch, frozen peaches work great. Just let them thaw before muddling so you get all the juicy flavor and they break down easily.

This cocktail came straight out of my obsession with peak-season stone fruit. I wanted a drink that celebrated ripe, juicy peaches without drowning them in artificial flavors or sugary mixers.

To make a pitcher (serves 6):

  • 6 ripe peaches, sliced
  • 1 cup fresh lemon juice
  • ¾ to 1 cup simple syrup (adjust to taste)
  • 1½ cups vodka
  • Sparkling water (to top individual glasses)

  • 2 oz vodka
  • 1 oz fresh lemon juice
  • 3/4 oz simple syrup or agave

instructions

  • Add peach slices, lemon juice, and simple syrup to an empty cocktail shaker. Muddle well until the peaches are broken down.
