- 2 large whole heads of garlic
- 2 tsp extra virgin olive oil
- 1/2 cup mayonnaise full fat or low fat
- 1 Tbsp fresh lemon juice about 1/2 lemon
- 1 tsp Worcestershire Sauce
- 1/8 tsp cayenne pepper optional
- Salt to taste
Preheat the oven to 400˚F.
Trim the tops off each head of garlic so all of cloves are exposed. Drizzle with 1 tsp olive oil each, then sprinkle with salt and pepper.
Wrap the heads individually in aluminum foil. You can place them in a small baking dish or directly on the oven rack.
Bake for 50 to 60 minutes until soft and golden brown. Let cool for about 5 to 10 minutes until you can handle them without burning yourself. Unwrap each whole head of garlic.
Squeeze out the garlic cloves into a medium bowl. Mash with a fork until smooth.
Stir in mayonnaise, lemon juice, Worcestershire sauce, and cayenne (if using) until well combined.
Refrigerate for at least 30 minutes before using. Serve!
