- 1 1/2 cups unsalted butter
- 4 1/2 cups confectioners sugar
- 1/2 cup fresh, ripe strawberries washed, stemmed, and hulled
- 1 1/2 tsp vanilla extract
Add strawberries to a food processor. Puree until smooth and set aside.
Add butter to the bowl of a stand mixer fitted with a paddle attachment. Beat until creamy, about 3 minutes. Gradually confectioners sugar, beating until just combined.
Add strawberry puree and vanilla. Beat until the buttercream is light and fluffy (approximately 3-5 minutes). Use as desired or store in an airtight container in the refrigerator for up to 1 week.
