strawberry buttercream frosting

ingredients

  • 1 1/2 cups unsalted butter
  • 4 1/2 cups confectioners sugar
  • 1/2 cup fresh, ripe strawberries washed, stemmed, and hulled
  • 1 1/2 tsp vanilla extract

instructions

  • Add strawberries to a food processor. Puree until smooth and set aside.
  • Add butter to the bowl of a stand mixer fitted with a paddle attachment. Beat until creamy, about 3 minutes. Gradually confectioners sugar, beating until just combined.
  • Add strawberry puree and vanilla. Beat until the buttercream is light and fluffy (approximately 3-5 minutes). Use as desired or store in an airtight container in the refrigerator for up to 1 week.
