Preheat the oven to 350˚F. Use parchment paper to line an 8x8-inch baking pan. Make sure the edges are long enough to hang over the edges for easy removals.
Add melted butter and sugars to a large bowl. Whisk to combine. Add eggs and vanilla, whisking until combined.
Stir in salt, espresso powder, flour, and cocoa powder until just combined. Make sure that you do not over mix.
Pour batter into the prepared pan, spreading it into an even layer.
Sprinkle 1 cup crushed eggs on top of the batter. You can add some whole ones too for the look!
Bake for 30 to 40 minutes until brownies are just set. A toothpick inserted in the center should come out with wet crumbs.
Let cool completely before slicing into squares.
