watermelon gin cocktail

This refreshing watermelon cocktail is the drink of the summer!

ingredients

  • 4 cups chopped fresh watermelon
  • 16 fresh mint leaves
  • 1 lime cut into wedges
  • 1 1/2 oz simple syrup
  • 4 oz gin
  • Garnish: watermelon wedges mint sprigs

instructions

  • To make the watermelon juice, add watermelon chunks to a blender or food processor. Blend on high until smooth. Strain through a fine mesh sieve into a large glass. Set aside.
  • In a cocktail mixing glass, combine mint leaves, lime wedges, and simple syrup. Muddle well to break down the lime wedges. Fill halfway with ice. Add gin and 1 cup watermelon juice. Stir to combine.
  • Strain cocktail into two cocktail glasses filled with ice. Garnish with watermelon wedges and mint sprigs. Serve.

To make a big batch for 8 people, you will need one large watermelon, 1 cup mint leaves (about 1 1/2 bunches), 4 limes, 3/4 cup simple syrup, and 2 cups gin. Add mint, lime wedges and simple syrup to a large pitcher. Muddle together well, fill with ice, and set aside. Working in batches, make watermelon juice using the entire watermelon (broken into chunks). Strain the juice and add it to a pitcher (you should have 4 cups total) with gin. Stir to combine and serve.
