In the last 5 minutes of baking, add the Eggo Waffles to the oven to bake for 5 minutes or use a toaster to get them golden brown and warm.
While the nuggets and waffles are cooking, add whipping cream to the bowl of a stand mixer. Whip on high speed until the cream reaches stiff peaks. Set aside.
Add mango to a high powdered blender or food processor. Puree until smooth. Set aside.
To assemble the chicken and waffles, add two waffles to each plate. Spread each waffle with ¼ of the mango puree. Pile 5 nuggets on top of the waffles.
Drizzle with maple syrup and place a dollop of whipped cream on top. Sprinkle with coconut flakes and serve immediately.
